2 better than 1

First time I get some extra help while making this recipe. Zipping white wine like there is no care or worry on the world. Turns out, we were completely ignoring a very obvious way to prepare veggies. By smashing them beyond recognition.

Granted, this takes a bit more time than the other recipes (bout 40 minutes). However, for a few minutes, we managed to escape Berlin, without leaving the flat, just for a bit 🙂

Base
In it:

  • 2 big potatoes
  • Coriander
  • Salt, pepper and cardamon
  • 1 teaspoon of Olive oil
  • 3 tablespoons of plain flour
  • 1 cup of skim milk

How to:

  • Peel and dice the potatoes as small as possible.
  • Boil them for about 7 minutes minutes or until soft. The less water and the smaller are the cut for potatoes will make them to cook quicker.
  • Once cooked, take out the water with a sieve.
  • Let it cool down for a couple of minutes.
  • Cut and add the coriander
  • Use a blender and mix it with the skim milk until you get a cream.
  • Take out the cream, use any pot or bowl to start mixing it with your plain flour.
  • Add the olive oil to a hot pan and start pouring the mix by small servings (circles)
  • Let them fry for 2 minutes or until golden, each side
  • Serve

Carrots and peas (both creams used the same method)

In it:

 

  • 3 carrots
  • 1 cup of peas
  • 1/2 cup of skim milk
  • salt, pepper and cumin

How to:

  • Peel and dice the carrots as small as possible.
  • Boil the carrots and  peas in separate pots for about minutes. The less water and the smaller are the cut for the ingredients will make them to cook quicker (same as the potatoes).
  • Once cooked, take out the water with a sieve, separatedly!.
  • Let it cool down for a couple of minutes.
  • Use a blender and mix only the carrots with the skim milk until you get a cream.
  • Again, use a blender and mix only the peas with the skim milk until you get a cream.
  • Season everything with salt epper and cumin at taste.
  • Serve in separate bowls

Seafood

In it:

  • A variation of clams, squid and prawns
  • 1 teaspoon of balsamic oil
  • Salt and pepper

How to:

  • Add the oil in a big hot pan
  • Start pan-fry the seafood for about 5 minutes
  • season it

Serve everything in thw following order

  • The potato base
  • The cream of your preferrence
  • Seafood
  • Coriander (I also recommend adding some lime juice)
