A veggie snack

So the heatwave is gone. Now things are getting “back to normal”. However, my appetite has changed and I no longer want to eat as much as I used to, this is perhaps temporary. This is why the next recipe is a snack. Healthy, simple and quite honest very tasty! As usual, you can replace some of the ingredients to adapt it at your own taste.

That being said, let’s cook!

In it:

Potatoes (3 minimum)

Cherry tomatoes. As many as you are willing to prepare

1 Avocado

Mozarella

1 Lime

How to:

Grate the potatoes and put them in several portions. You can use a muffin tray to make things easier

Bake for 20 minutes or until golden

Add the avocado to a food processor, blender or simply use a fork to mix it with the lime juice and spices.

Once baked, smear the avocado mix on top of the potatoes

Add a layer of mozarella and tomato on top
